CSA Week Twenty-Three

My last week of my CSA - wow, that was fast.  Sorry, I have been so busy - just had a lot going on.  Here is what I got:

-Kale
-Butternut squash
-Collard greens
-Sweet potatoes
-Potatoes
-Garlic
-Lettuce
-Carrots
-Acorn Squash
-Pea shoots
-Red onion
-Apples

Looks like a lot of great things for Thanksgiving!

CSA Week Twenty

Wow, tons of greens this week!  Here is what I got:

-Turnips
-Monster sweet potatoes
-Monster fennel
-Mesclun
-Curly endive
-Daikon
-Bok choy
-Kale
-Broccoli
-Jalapenos
-Apples
-Eggs
-Mums

So Wednesday I finally made roasted broccoli, which my mom has been raving about for a year.  It was so good and easy.  You can make it as healthy or unhealthy as you want, but it is really tasty and quick to make.  I used this Alton Brown recipe, and skipped on the cheese and used crushed croutons instead of Panko bread crumbs.  It was good-od-od-od-od-od.  I also made apple chips: FAIL.  They were soggy the next day, so really I just have dehydrated apples (not that exciting).

Last night I made sweet potato tacos, which I hope to share soon.  Really tasty, and a nice change from the old routine.  Tonight I am thinking about a caramelized fennel and onion pizza, but we shall see.

If you are looking for another sweet potato recipe, try this sweet and spicy lentil soup.  You could even substitute the swiss chard for kale.  Or how about this baked spaghetti squash with tomatoes and basil?  I told you I was obsessed.

CSA Week Nineteen

Here is what I got yesterday in my CSA:

-Kale
-Potatoes
-Radishes
-Carrots
-Broccoli
-Eggplant
-Mesclun
-Apples
-Bosc Pears
-Eggs
-Chrysanthemums

So I have big apple plans this weekend.  I am making caramel apples and an apple crisp or pie.  I have a ton of apples to use from my trip to the Hudson Valley.

I am so tempted to roast vegetables again and just put them on top of some farro or quinoa, but maybe I could get more creative.  We shall see.

Don't these Crostinis with Kale and Parmesan look tasty as an appetizer?  Or how about this carrot salad?

Can I just say I am in love with spaghetti squash?  You can literally eat it like spaghetti and not feel bad about all the carbs.  Genius.

CSA Week Seventeen

This has been a busy week, so sorry for the late post, but here is what I got last week in my CSA:

-Kale
-Edamame
-Leeks
-Radishes
-Cabbage
-Potatoes
-Carrots
-Pears
-Apples
-Eggs
-Wildflowers

As soon as I saw potatoes and carrots, I knew I had to roast some vegetables again.  They were so good last time!  Click here to learn how.  We also sautéed some kale, and munched on radishes.

This may sound weird, but I truly love shredded cabbage with lemon juice and salt.  It is great for digestion.  Roasted cabbage with lemon sounds pretty good too, or even homemade sauerkraut in Martha Stewart Living this month (not online yet).

Unfortunately, I won't be able to pick up my CSA this week so their won't be a post.

CSA Week Fifteen

I have been such a lazy bum when it comes to cooking these days.  I have been pretty busy at work, etc., etc..  So hopefully I can get back on track with cooking this week.  Here is what I got from my CSA last week:

-Jalapenos

-Plums
-Eggs
-Marigolds and one sunflower

On Wednesday I made tacos, story of my life.  And on Sunday I roasted a ton of veggies, and I might make a cannelloni bean and kale soup this week.

CSA Week Four

I cannot believe June is already over!  And this short week totally flew by.  This is what I got in my CSA this week:

-Curly endive
-Kohlrabi
-Kale

-Cucumbers
-Zucchini
-Broccoli
-Blueberries
-Blackberries
-Eggs
-Sunflowers

Wednesday night I used some of my lettuce and made black bean tacos, and had the blackberries for dessert.  By the way, they were the biggest blackberries I had seen in my life.

Last night, I made Jamie Oliver's Broccoli and Pesto Tagliatelle, which I hope to share soon (good bye basil and broccoli).

Today my friend is making these McClure's Garlic and Dill Pickles with our cucumbers (click here and scroll down for the recipe).

Later this weekend, I am going to try the Clinton St. Baking Company's Blueberry Muffins.  Roast some beets, toast some walnuts, and toss together with some goat cheese for a warm salad.  And maybe make this Zucchini Cake with Crunchy Lemon Glaze, click here for the recipe.  I found a stir-fry recipe in Jamie's Food Revolution cookbook, that I might tweak to use the tat soi, and I am making this Kohlrabi Salad.  Geez there is so much to make...I am completely forgetting about the kale and orzo salad from Super Natural Every Day and what about the curly endive?  So much to do, and in a very hot kitchen I might add!

CSA Week Three

This week at my CSA, I received:

-Spinach
-Dill
-Brocoli
-Scallions
-Kale
-Basil
-Zucchini
-Blueberries
-Raspberries
-Eggs
-Gorgeous sunflowers (not pictured)

Since I will be out of town 4th of July, I already gave a bit of my produce away, so it could be enjoyed during the festivities.

Last night I made blueberry pancakes with friends, and tonight I am planning to make a scape pesto pasta with spinach (still have my scapes from a while ago-whoops).

My friend plans on making this kale and white bean soup from Martha Stewart.

If you are looking for something to do with spinach, try these Spinach and Mushroom Enchiladas.

This Summer Zucchini Pasta is so easy and good, and perfect for leftovers throughout the week.

Raspberries are definitely going to be eaten as is, and same with the blueberries, but these are the perfect color combination for the Fourth of July.  I can't tell you enough, how I love this Blueberry Kuchen.  I might still make it and try to take it on the plane with me.

CSA Week Twenty-Four

Last Wednesday was my final week of my CSA.  It has not really hit me yet, but I know it will once I run out of all the produce.  Seriously, I don't realize how the CSA shaped my eating until it is gone.  Here is what I got my final week:

CSA Week Three

This week I received a plethora of greens, which included lettuce the size of a baby!  Here is what I got:
-The mother of all green lettuce
-Swiss Chard
-Escarole
-Kale
-Snow Peas
-Turnips
-Parsley
-Blueberries
-Gooseberries
-Dozen Eggs

I am so excited to have my first batch of blueberries of the season.  I spent the majority of my time last night looking for something special to do with them.  Sometimes the best thing to do is to just eat them.  They are the perfect snack.  Tonight though, I am making blueberry pancakes.  I can't think of anything better than breakfast for dinner.  I was thinking of making blueberry kuchen, but I want to save that for the Fourth of July, so I have settled on trying blueberry frozen yogurt.  Hopefully I will get more blueberries next week so I can make more treats.
As for the gooseberries, I want to try my hands at gooseberry pie, but still searching for a good recipe and  I also need to stop by the Green Market and see if they have more.  One pint just isn't enough for pie.

Kale Chips

For the past few years I have tried to like kale, but by the time I swallow I am dreading the next bite of it.  Kale is packed with nutrients and antioxidants (click here to read more), so I am always annoyed with myself for not liking it.

So for the past year or two I have noticed a few kale chip recipes popping up in the food blogosphere.  So I thought I would give it a try and hope this would be the end of my kale-loathing days.  The recipe is taken from Smitten Kitchen and is simple enough.  A bunch of kale, some olive oil, sea salt, and I added some red pepper flakes for a little heat.  Twenty minutes later you have kale chips, which sound and look similar to the dried leaves you rake up  in the fall, sans the red color.  I would imagine they even have the same texture if you ate a dead leaf.  But don't get me wrong, these chips are packed with flavor, they still have that green smell and are light and crispy.  So light that they can fly out of your hands and on to the floor, but so good that you still eat it.  Five second rule!  If you are like me about your dark greens I would definitely give this recipe a try.

CSA Week Three

For this week I got a ton of greens and no more rhubarb :( So for this week it looks like a ton of salads, sauteed greens and stir-fry.

Here is what I got:

-5 garlic scapes
-snow peas
-b0k choy
-mesclun greens
-kale
-spinach
-2 zucchinis
-2 quarts of strawberries

Already this week, I made a spanish tortilla with scapes and spinach and quesadillas with spinach and black beans. Tonight I am making stir-fry with bok choy, scapes, zucchinis, and snow peas.
