This week I roasted the carrots, broccoli, and acorn squash. I saved the squash seeds, and plan to toast them soon. I might make this hearty winter vegetable soup with the dill too.

CSA Week Six
It is officially delicious fruit season! I got a lot of little jewels this week, but I will be honest - where the heck are my cherries? I am dying for them! Here is what I got from CSA this week:

Last night I got right down to business, and made a few things I could keep for later use. I am going out of town this weekend with Murray's Cheese on their Summer Whey-cation trip to the Vermont Cheesemaker's Festival. CSA Week Three
This week at my CSA, I received:
-Spinach
-Dill
-Brocoli
-Scallions
-Kale
-Basil
-Zucchini
-Blueberries
-Raspberries
-Eggs
-Gorgeous sunflowers (not pictured)
Since I will be out of town 4th of July, I already gave a bit of my produce away, so it could be enjoyed during the festivities.
Last night I made blueberry pancakes with friends, and tonight I am planning to make a scape pesto pasta with spinach (still have my scapes from a while ago-whoops).
My friend plans on making this kale and white bean soup from Martha Stewart.
If you are looking for something to do with spinach, try these Spinach and Mushroom Enchiladas.
This Summer Zucchini Pasta is so easy and good, and perfect for leftovers throughout the week.
Raspberries are definitely going to be eaten as is, and same with the blueberries, but these are the perfect color combination for the Fourth of July. I can't tell you enough, how I love this Blueberry Kuchen. I might still make it and try to take it on the plane with me.

Pickle Party!
I would like to introduce my first guest blogger: Adam - pickle aficionado, meat lover, and beer drinker.
Nothing screams summer like home-made pickles, even when eaten in the dark days of winter they bring the tongue right back to sunnier times, but the following pickles are so good that they never make it for more than a few weeks in the refrigerator.
“Pickle” is a broad term. Alton Brown defines pickles in Good Eats: The Early Years
as:
1) a solution or bath for preserving or cleaning, a brine or vinegar solution in which foods are preserved 2) any food item preserved via above definition.
There are three types of pickles, all have the same goal of limiting the bacteria that can grow and thus preserving the food.

CSA Week Five
I have been busy these last couple weeks with visiting friends. And on top of that, the hot weather has really reduced my enthusiasm for cooking. That said, I am far behind this week eating my way through my CSA food.

CSA Week Four
Okay, so this is a much delayed post since I will be picking up my CSA goodies tomorrow, but I still thought I would share what I got last week. This last week I had been super busy preparing for company and the Fourth of July. I spent many nights working on different frozen yogurts to create homemade bomb pops, as well as making rocky road ice cream. I am hoping to share the recipe with you soon!
Here is what I got last week:
-2 pints of blueberries
-6 peaches
-Broccoli
-Dill
-Nappa cabbage
-Swiss chard
-Summer squash/zucchini
-Cucumbers
-Lettuce
-Turnips
My friend made some bread and butter pickles and some quick pickles because we had so many cucumbers. We just gobbled up the peaches (which were AMAZING), but I am saving the blueberries for blueberry kuchen or a peach-blueberry cobbler this week. We also threw together some tostadas, salads, stir-fry and I am making the swiss chard and caramelized onions tacos as I type! I still haven't used all the zucchini, but I am thinking of making this zucchini and ricotta galette from Smitten Kitchen.
Last year around this time I made blueberry kuchen and got some delicious treats at the Doughnut Plant.

CSA Week One
Last night I went and picked up my first batch of produce from my CSA. Although, it seemed a little less this year because of the oddly cool weather we have been having, it was still just as exciting. It is cool to see the dirt on the plants and even the roots left on the arugula. Here is what I got this week:-1 bunch of arugula
-2 leeks
-1 bunch of lettuce
-1 bundle of asparagus
-1 bunch of pea shoots
-dill
-2 quarts of strawberries
-2 stalks of rhubarb
-1/2 dozen eggs
When you get fresh produce, it is important to store it away properly to ensure that it stays fresh for the longest period possible.
For certain vegetables such as lettuce, I like to place in a salad spinner and remove all the dust and dirt and then place in a paper towel-lined air-tight container. That way it is ready whenever I need it.

For herbs like dill I place in a glass of water and place in the fridge.
For the strawberries, if I am not using them right away I place them in the refrigerator on a paper towel-lined plate. Strawberries - especially local ones are very fragile and can easily get crushed in quart containers. Do not wash them until just before using them.

I made a Spanish tortilla with asparagus, leeks, and potatoes last night. Here is a simple how-to on making a Spanish Tortilla (which is an egg and potato dish). Click here for a version from Everyday Food.
Preheat oven at 375 degrees.
Get a few potatoes and slice thinly. Salt and pepper generously. Heat olive in a non-stick or cast-iron skillet. Place potatoes and cook until tender crisp, about 10-15 minutes. Stir occasionally so the potatoes are rotated from the heat.

In the meantime, slice the rest of whatever you want to put it the skillet. I sliced up the asparagus and leeks. Place in the skillet and stir together and cook until tender.

Take 5-8 eggs (depending on how eggy you like it). Salt and pepper and put a generous dash of hot sauce and whisk together. Place egg mixture in skillet of the potatoes - the eggs should not cover all the potatoes. 
Place in oven and cook for about 12-15 minutes until eggs have set and top becomes golden. Slice and serve with hot sauce on top.
