This week in my CSA I got more zucchini (ugh) and a ton of other stuff. Here is what I got:

Feeling a little unmotivated this week, but made some tacos and pesto on Wednesday. On Thursday, my friend made these stuffed peppers from Smitten Kitchen, which used up the rest of the tomatoes, peppers, and some zucchini.
Tonight, I am planning on making a zucchini tart, which uses the pesto I made and the zucchini!
I would love to make a watermelon salad with basil and feta, and maybe roast some beets. Ugh, what to do with this eggplant? I might make this roasted tomato and eggplant soup (to hide it)!

Squash and Goat Cheese Frittata
My friend made us this delicious Squash and Goat Cheese Frittata (from Martha Stewart's Cooking School) this weekend. It is the perfect breakfast meal, when you are overloaded with yellow squash and zucchini! I love how fluffy this frittata came out, I definitely will be making it again. The squash and zucchini can be replaced with any precooked vegetables you like.

CSA Week Six
It is officially delicious fruit season! I got a lot of little jewels this week, but I will be honest - where the heck are my cherries? I am dying for them! Here is what I got from CSA this week:

CSA Week Five
This weeks CSA, there was a lot of green!
Here is what I got:
-Napa cabbage

I have been getting into a pattern of making black bean tacos with the lettuce and onion, mixed with tomatoes, cheddar cheese, and tons of hot sauce, and blackberries for dessert. It is just so easy, mindless, and tasty.
I am tempted to make the Broccoli and Pesto Tagliatelle again, but this Summer Zucchini Pasta looks even better. This Lemony-Zucchini Goat Cheese Pizza looks pretty tasty too! And making pickles for real this time! I am even thinking of making kimchi with the napa cabbage.
I made a blueberry-banana sorbet and some blueberry muffins, which I hope to share with you soon, but this week I am sticking to Blueberry Kuchen.

Later this weekend, I am going to try the Clinton St. Baking Company's Blueberry Muffins. Roast some beets, toast some walnuts, and toss together with some goat cheese for a warm salad. And maybe make this Zucchini Cake with Crunchy Lemon Glaze, click here for the recipe. I found a stir-fry recipe in Jamie's Food Revolution cookbook, that I might tweak to use the tat soi, and I am making this Kohlrabi Salad. Geez there is so much to make...I am completely forgetting about the kale and orzo salad from Super Natural Every Day and what about the curly endive? So much to do, and in a very hot kitchen I might add!

CSA Week Three
This week at my CSA, I received:

Since I will be out of town 4th of July, I already gave a bit of my produce away, so it could be enjoyed during the festivities.
Last night I made blueberry pancakes with friends, and tonight I am planning to make a scape pesto pasta with spinach (still have my scapes from a while ago-whoops).
My friend plans on making this kale and white bean soup from Martha Stewart.
If you are looking for something to do with spinach, try these Spinach and Mushroom Enchiladas.
This Summer Zucchini Pasta is so easy and good, and perfect for leftovers throughout the week.
Raspberries are definitely going to be eaten as is, and same with the blueberries, but these are the perfect color combination for the Fourth of July. I can't tell you enough, how I love this Blueberry Kuchen. I might still make it and try to take it on the plane with me.

CSA Week One
I cannot believe it is already CSA time! These last few months have totally snuck past me. Anyways, yesterday was the first day of my CSA, and I was surprised by all the variety. This is my third year as a member of my CSA and it just seems to be getting easier and more fun. I know my first year was exciting, but overwhelming trying to figure out exactly what to make. I think this year will be much easier.
Here is what I got:
-Rainbow Swiss chard
-Salad turnips
-Radishes
-Brocoli rabe
-Lettuce
-Braising greens
-Scapes
-Zucchini
-Rhubarb
-Strawberries
-Blueberries
-Eggs
-Lavender (I added weekly flowers to my share)
Last night I made a simple salad with lettuce, radishes, salad turnips, and Parmesan. I also stewed some of my fruit. I will be sharing the recipe tomorrow. Tonight, I am making my favorite Brocoli Rabe Pasta (click here to view the recipe).
I plan to try to make a Swiss chard baked omelette this weekend, and Braising Green Tacos (click here for the recipe) maybe this Friday. And maybe this Zucchini Spice Bread, click here for the recipe.

CSA Week Eleven
Hi! Here is what I got from my CSA this week:

Last weekend, I had an impromptu pizza party. The variety of vegetables this season are perfect for pizza making. I also made this Lemony Zucchini Tart from Good Food, Good Wine, Bad Girl blog. I could not find lemon fetish feta cheese, but replaced it with a regular feta, and it still turned out very tasty. I definitely recommend trying it if you still have zucchini lying around. It was a pretty quick, especially if you have a mandolin to slice up the zucchini and shallot.

Last night I made David Lebovitz's Zucchini Cake with Crunchy Lemon Glaze. I swear anything he makes is amazing. The cake is super moist, and the finely chopped nuts create a nice texture throughout. The lemon glaze by itself is very tart, and I felt like I should have added more sugar, but as it seeps into the cake it mellows out - so don't fear. If you are in the mood for a "healthy" dessert or a breakfast treat, I would definitely try the recipe, and if you haven't checked out David's blog, click here.

CSA Week Nine
This is one of those weeks that when you get the food and you know exactly what to do with it - just eat everything on its own. Slice up tomato and add some salt, cut up some melon for a fresh dessert, or add some cucumber to a pitcher of water for a fancy drink. Here is everything I got:

Summer Zucchini Pasta
Last night I whipped up this super easy and not to mention quick recipe of Summer Zucchini Pasta from The Splendid Table's How to Eat Supper
. I even got to use a few of my CSA goodies - cherry tomatoes, basil, and zucchini. Seriously this took me ten minutes total, and I love the pops of tomato, the freshness of basil, and the heat from the red pepper flakes. The best part is that is great warm, room temperature, or cold.

CSA Week Seven
I can't believe it is already Week Seven - almost two months of delicious, fresh food. The produce has definitely shifted form the beginning. At one point I was so sick of all the greens, but now I miss them. It was always a good excuse to make tacos or tostadas. The good news is that I got loads of corn this week. Corn is one of my favorite summer time treats. I don't care if I have just eaten the biggest meal of my life, if I walk by a street fair I have to stop and get the roasted corn on the cob with lime juice, salt, and chili powder. I will say that sadly this corn does not compare to the sweet corn of Iowa.
Here is what I got this week:
-14 ears of corn
-Small head of lettuce
-Dill
-Basil
-Carrots
-Zucchini
-Cucumbers
-Half a head of cabbage
-Peaches
-Cherries
-Eggs
I combined this week's and last week's basil and made pesto Wednesday night. This is very quick and easy if you have a food processor, but have no fear - you can also use a mortar and pestle (hence where the name "pesto" comes from), which will take a bit longer, but is the traditional way. I combined Martha Stewart's recipe from Martha Stewart's Cooking School
and the Joy of Cooking
.
Ingredients for pesto (1 cup):
-2 cups fresh basil leaves
-1/3 cup walnuts or pine nuts, toasted (I used walnuts because they are cheaper and don't spoil as fast, but pine nuts are delicious)
-1/2 cup finely grated Parmesan cheese
-3 cloves garlic, peeled*
-1/2 cup olive oil, or more if needed
-salt and pepper to taste
*Martha Stewart recommends blanching the garlic to mellow its flavor, creating an overall sweeter pesto. To blanch - place garlic cloves in a small sauce pan and cover with 1 inch of water. Bring to a boil over high heat, then immediately drain and let garlic cool to room temperature.
To begin, toast the walnuts and then cool completely. Combine basil, walnuts, garlic, and Parmesan cheese in food processor until everything in chopped into very small bits and the basil is pulverized. While food processor is on, slowly add olive oil until the pesto is pretty smooth. Use immediately on pasta, sandwiches, or pizza, or cover with a layer of oil and store in an airtight container in the refrigerator for up to 3 days.

Roasted Vegetable Lasagna

So a couple weeks ago, some friends of mine got together for an Italian feast. Josh was kind enough to prepare a vegetarian dish for me - The Joy of CookingHere are the ingredients for The Joy of Cooking
's Roasted Vegetable Lasagna (8-12 main course servings):
For the layers:
-3 cups tomato sauce
-4 cups shredded mozzarella (1 pound)
-1/2 cup grated Parmesan (about 2 ounces)
-2 eggplants (about 3 pounds), quartered lengthwise, sliced in half inches
-6 medium zucchini (about 2 pounds), sliced in half inches
-1/2 cup of olive oil
-1 teaspoon salt
-1/2 teaspoon black pepper
-1 pound of lasagne
For cheese filling:
-15 ounces ricotta
-2 large eggs
1/2 cup grated Parmesan (2 ounces)
-1/2 teaspoon salt, or to taste
Black pepper to taste
Grated or ground nutmeg to taste
To begin, preheat the oven to 450 degrees. Grease a 13x9x2 inch baking or lasagne pan.
Slice vegetables in half inch pieces. Toss vegetables with olive oil, salt, and pepper. Divide the vegetables between two roasting pans or baking sheets, spreading them in a single layer. Roast for 20 minutes, then toss the vegetables and continue to roast until well browned and soft, about 20 minutes more. Transfer the vegetables to a large bowl and set aside. Reduce the oven temperature to 375 degrees.

While your vegetables are roasting, cook the lasagne noodles in a large pot of boiling water until barely tender. Drain the pasta and place it in a bowl of ice water to cool. Separate the pasta and blot it dry.
In a medium bowl, make the cheese filling, by combining the ricotta, eggs, Parmesan, salt, pepper and nutmeg. Then stir until well combined.
Now it is time to assemble the dish. Spread a thin layer of sauce over the bottom of the prepared pan. Cover with a layer of pasta, slightly overlapping. Spread with one-third of the ricotta mixture. Sprinkle with one-quarter of the mozzarella and grated Parmesan over the ricotta. Spoon one-third of the roasted vegetables on top and then 1/2 cup of sauce. Add another layer of pasta and then continue layering the lasagne until you have 4 layers of pasta and three layers of filling. Spread the remaining sauce on top and sprinkle with the remaining mozzarella and Parmesan.

Cover pan with aluminum foil and bake for 30 minutes. Uncover and continue to bake until golden and bubbly, about 15 minutes more. Let stand for 15 minutes before serving.
Ta-da!
Overall dinner was absolutely delicious. I think one of the most important details to point out is that Josh cooked the pasta to the perfect tenderness - not too tender. The noodles were still firm enough after the lasagne baked, that each layer was distinguishable in your mouth. Also, roasting the vegetables gives the dish an added richness overall, and although I didn't notice it, everyone said that you could really taste the nutmeg.
To finish the dish, we enjoyed a mediocre pint of chocolate gelato, and tasty box of Amaretti di Saronno cookies
. The cookies are wrapped in pairs with tissue paper, making them feel like you are unwrapping a gift every time you have one. They are a real treat, but kind of pricy.
On a side note: Josh's sister gave him an electric pepper grinder. When you turn it upside down the grinder turns on and pepper comes out. Click to watch the video below.

I have made Martha Stewart's zucchini spice bread several times last summer. It is a great way to use up zucchini if you feel you are a bit over loaded with it. This bread is pretty quick to make and it freezes well, so you have the option of saving it for later. This recipe calls for the usual spices, such as cinnamon, nutmeg, and cloves. It also calls for ground ginger which I didn't have on hand, so I just substituted all-spice this time for a "Christmas in July" taste ;) Zucchini has a very mild and subtle sweet flavor. You don't really even realize there is a vegetable in the bread. The zucchini just creates a very moist and dense bread - depending on how large your zucchini is.Thursday, July 2, 2009
CSA Week Four
This week I was really excited to get raspberries and blueberries! Plus I got some snow peas, bok choy and even broccoli - perfect for another stir fry.Here is what I officially received:
-5 garlic scapes
-bok choy
-red lettuce
-green lettuce
-braising greens
-snow peas
-2 zucchinis
-swiss chard
-2 pints of blueberries
-1/2 pint of raspberries
Okay, so I couldn't help but eat all the raspberries immediately, but with the rest of the food I am planning this:
-blueberry kuchen
-stir-fry with broccoli, scapes, bok choy, zucchini, and snow peas
-Sweet potatoes, apples, and braising greens
-black bean tacos
-zucchini spice bread
